Today I’m sharing my most prized recipe….a family secret maybe? I don’t know, haha…probably not, but it is a recipe near and dear to me. I don’t know what I love more, the beautiful design stamped on the cookie from the iron or the sweet buttery crispiness when you bite into one. These are melt in your mouth delicious + they can be dressed up or enjoyed just as they are. We always sprinkled powdered sugar over them, but you could fill them with cream or even dip them in melted chocolate.

This recipe comes from my great grandmother on my fathers side. Her and my great grand father came into Ellis Island from Norway. She worked as a chef in New York City where she made these very cookies. 

Fun little fact according to my dad my grandfather traced our ancestry all the way back to the Christian Viking Leif Erickson. How neat is that? 

Watching my parents make these cookies year after year are some of my favorite childhood memories. I can still picture our coiled stove burners, my mom would wrap the metal trays under the coils with aluminum foil to catch the overflow batter. Our old krumkake iron lay on top of the stove, the wood handle worn from years of use. My dad was in charge of dropping the batter on the iron, flipping, and pulling it off the iron with a butter knife. My mom stood right next to him with the carrot. While the cookie was hot she’d quickly roll it up into a cone shape and I waited beside my mom for the broken cookie pieces to eat and now I do the same thing each year with my husband and boys. Isn’t tradition such a beautiful thing? The thought of simple things done with care and beautiful moments passed down from generation to generation. It makes my heart swell with warmth and thankfulness. To think I had a relative in Norway who once did this with her children, burnt finger tips just like me, pulling the delicate krumkake from the iron, careful not to roll to hastily, but quick enough that it doesn’t harden before it’s rolled.


  • Ingredients you will need
    • 4 eggs
    • 1 cup of sugar
    • 2 cups of flour
    • 3 tsp of vanilla
    • 1/2 lb of butter
    • Powdered sugar for dusting
    • You will need a krumkake iron you can use a manual one or an electric one.
  • How to make them
    • Beat eggs + add sugar. Add softened butter and mix. Add in your vanilla.
    • Then add in flour. I just mix with my handheld mixer.
    • Drop half a TBSP of batter on to a preheated iron you can use an old fashioned iron, my favorite way, but I have to use an electric one because of our stove top
    • Check your cookie — it doesn’t take long, it should be light golden brown. If you’re using an electric iron they typically have settings and lights (like a waffle maker)
    • Remove from iron with a butter knife or with a spatula.
    • Place on plate and roll into a cone shape using a carrot or a wooden cone.
    • Dust with sugar and store in airtight container. These freeze well, too! Though if your family is like mine they won’t last long enough to freeze!
