Hello, hello! How are ya? I hope you’re well. I’m so glad you’ve stopped by today! Today on the blog I want to take a minute to share some dinner inspiration with you. I’m hoping this series if nothing else, encourages you to gather around the family table and share a meal with the ones you love. Supper time just so happens to be one of my favorite times of the day. I look forward to gathering around the table. Eating a meal together with my little family and talking about our day. Before we begin, I want to share a few tidbits.

  • No. 1 – our family eats mostly gluten free. My husband is completely gluten free, so for that reason the rest of our family have adopted a mostly gluten free diet [at least for supper time]. Mostly for my meal making sanity, haha. So you’ll likely see a lot of gluten free meal ideas!
  • No. 2 – we are pretty basic around here. You’re not going to come across some crazy recipes. We eat a lot of the same old same old, and just enjoy simple, old fashioned style meals.
  • This blog series isn’t going to be filled with a bunch of recipes. I tend to be a wing it type of cook and I’m not much of a meal planner. For this reason I’m going to be sharing meal inspiration…maybe with a few ingredients lists or “how to” But mostly just meal ideas and what we are eating in a week! Let’s dive right in, shall we?

MONDAY | I like to keep this pretty simple because it’s a Monday, haha. So we normally eat some type of pasta meal on a Monday. Last week we had gluten free pasta [spaghetti] with a house salad and lots of veggies hidden in the sauce. To make my sauce I just use a big ole’ can of crushed on diced tomatoes, add in some chopped carrots, onions, celery, peppers, salt, pepper, maybe a dash of sugar and simmer until the veggies are soft. Then puree. Many times I will just brown some ground beef and add that in for a yummy meat sauce. You can make this ahead to save time! P.s. our favorite gluten free pasta is this brand HERE

TUESDAY | Taco salad. I like to use ground beef or ground turkey for this. We love the seasoning from Siete. I just brown my ground beef and add the seasoning as it’s browning. Lettuce from the garden is my favorite, [I like when I can get some from my parents garden] but when I don’t have enough crispy romaine chopped in ribbons is delicious as the base layer. After that I pile on the meat, the diced tomatoes, roasted corn is soooo good, cheese, crushed up tortilla chips and some taco sauce or homemade salsa! I also love avocado on mine but leave that off for the rest of the family.

WEDNESDAY | Grilled chicken marinated in italian dressing. Fried potatoes and corn on the cob or green beans. To add a little something exciting to my chicken I love to throw on a slice of tomato and american cheese at the end while it’s finishing up on the grill.

THURSDAY | Beef Stew in the crock-pot with beef bone broth, mixed veggies and potatoes. I like to throw a few slabs of butter in this, it just takes it to the next level. I usually just season with salt and pepper and random seasoning that sounds good. I like to use grass fed chuck roast and I cube it and cover it in flour and then sear it first. For a quick meal you can just cube the meat and throw everything in the crock pot. Adding diced tomatoes and sweet paprika for more of a hungarian gloulash type stew is my favorite way to make it.

FRIDAY | Leftovers

SATURDAY | Ham and cheese omelets and homemade gluten free waffles. I shared my waffle/pancake recipe HERE P.s. if you’ve never made an omelet in a cast iron pan…you absolutely must! There is nothing better than eggs cooked in cast iron!

SUNDAY | Turkey BBQ with homemade gluten free mac and cheese and broccoli.
