Gluten free can be a little tricky. I remember when my husband had to switch over to a gluten free diet, I thought, “eh, this won’t be so bad.” Until you realize that wheat lurks in foods you’d never even think would have wheat in it…I mean peanuts have traces of wheat in them…Obviously not in the peanuts themselves but in their containers through manufacturing. We started just buying shelled peanuts…But anyhoo I’m getting a little off course. Needless to say going gluten free was an adjustment, both in realizing that wheat/gluten is in sooo many things and also trying to adjust recipes to accommodate it. One thing my husband loves are waffles and pancakes and being the loving wife that I am, I didn’t want him to miss out, and so began my quest for delicious gluten free waffles the whole family would love. I tried mixes and recipes I found on Pinterest and they were all okay…but one day I decided to experiment a little bit and I came up with this recipe below. I’m not going to sit here and tell you these waffles and pancakes taste like Mama’s pancake breakfast from Cracker Barrel, but they are pretty darn delicious. The almond flour adds just a little something extra to the batter and the addition of the cinnamon creates a lovely flavor and aroma! I think you’re going to love these! The best part is I use this exact recipe for pancakes too. My husband loves the fluffiness of the waffles, but my one kiddo loves pancakes so I’ll usually break the batter up and make both at the same time! These are great frozen and also refrigerated. I like making a big batch on a Sunday and then we have quick breakfasts for the week!


3/4 cup almond flour 

1 cup gluten free flour blend of your choice – I use Bobs Red Mill 

2 tsp baking powder 

Sprinkle some cinnamon 

2 tbsp of raw sugar 

1 tsp salt 


2 eggs

1 1/2 cups of almond milk – you can use another milk of your choice 

1 tsp of vanilla 

1/4 cup of oil – I use olive oil –


Mix all of your wet and dry ingredients in separate bowls then combine! Your batter will be on the thinner side. Grease your pan- I love using cast iron for pancakes/waffle iron and cook accordingly [until golden brown]

This recipe will make about 10-12 pancakes/waffles depending on the size you make them.
